Boil the sweet potato in its shell, then leave it to cool.
Dissolve the yeast in a little warm water, add a little flour, mix until a paste is obtained, which is left to rise for 10 minutes on the table. Then add the mashed sweet potato with a fork, the rest of the water, 2 tablespoons of olive oil (in the oil left in the container now put the crushed garlic, to flavor it and use it to grease), salt and about 300 g of flour, mixing and kneading until a fluffy dough is obtained, but thick enough to be spread. (From the amount of flour given to the ingredients, I used a spoonful of mayonnaise, about 300 g of dough, leaving 90 for sprinkling on the table). Sprinkle flour on the table, knead the dough, just lightly enough to shape it, then spread it on a sheet of suitable thickness. Transfer to tray.
Grease with garlic-flavored oil (but without putting garlic on the dough) and sprinkle with oregano, rosemary and basil. It is grown from place to place so that it looks like a huge flower, then it is decorated with washed and sliced olives and tomatoes. The smoked meat is cut into thin slices and added to the top, in the notches previously made, so that when the dough grows in the oven, the meat holds the dough in place, where I cut it, to keep the flower shape.
Put the tray in the preheated oven, over medium heat, for about 20 minutes, remove the tray, grease it with yolk and put it in the oven for about 10 minutes. It will catch a beautiful sheen.

Portions: 4 large or 6 medium portions.
