  • 1 cup sugar

1. Grind all the biscuits as finely as possible (through the walnut grinder, or in the food processor). Set aside 200 g and mix them with 2 tablespoons of cocoa. Prepare a syrup in a ratio of 1: 1 water and sugar and let it cool.
2. In the rest of the biscuits, mix the other 3 tablespoons of cocoa and 200 g of baked and ground walnuts / hazelnuts. Add a little of the cooled syrup and mix (it is very likely that not all the syrup is needed). Stop adding syrup when you get a thick paste, slightly dry, but malleable. Give all the shit through the meat grinder or the robot, followed by the well-washed lemon, cut into quarters and added with the peel and mix the composition.
3. Having the 3 containers on the worktop (the one with the dry biscuits, the one with the biscuit and cocoa paste and the lemon and shit composition), wet your hands, take

a tablespoon of moist composition and round it in the palms. Flatten it and press with your finger in the center to form a hole, take a little mixture of lemon and shit, about 1/2 teaspoon and place it in the center.
4. Glue the cocoa ball back, round it again and roll it through the dry biscuits. Do this with all the remaining ingredients, until you finish the composition, and do not forget to wet your hands before preparing each ball.
